The flour is the dish. Everything else is what you put on it.
Whole wheat from a mill in Hounslow that still runs stones rather than rollers, and maize flour brought over for the makki di roti in winter. Dough is made twice a service and rested two hours — any less and the roti tears on the tandoor wall.

A clay pot buried in charcoal, and a cook with no gloves.
The tandoor came over from Amritsar in a shipping crate in 1998 and has been relined twice. Bread goes on the wall, meat hangs on skewers down the middle. Nothing takes longer than four minutes, which is why the marinade takes twenty-four hours.

We buy spices whole because powder is a guess about age.
Nineteen of them, dry-roasted in a kadhai until they speak, then ground on a stone that has been in the family longer than the restaurant. Garam masala is mixed on Mondays and finished by Sunday. It is never bought in.

Five rivers, wheat to the horizon, and a recipe that travelled in a suitcase.
Punjab is a farming state before it is anything else, and the food shows it — butter, cream, wheat, mustard greens, whatever the field gave that month. Bebe brought the recipes to Southall in 1971. We have changed the address, not the method.
